Friday Food TipFoodLogo Salmon Bake: Mix together 2 cups breadcrumbs, 1 cup grated parmesan cheese, ½ cup chopped parsley and finely grated zest of 1 lemon, season with salt and pepper to taste, and drizzle in a little olive oil to bind the mixture together. Arrange 500g salmon fillets on an oven tray lined with baking paper, press crumb mixture on top and drizzle more olive oil over. Bake 10 to 15 minutes at 200 deg C.
