Ham and Cheese Mini Frittatas: Brush a 12-muffin tin liberally with melted butter (about 3 tablespoons). Divide ½ cup chopped Swiss cheese and ½ cup ham or bacon evenly among the muffin cups. In a bowl, beat 8 eggs and add to it, 3 tablespoons chopped chives, salt and pepper to taste, a splash of milk and a few drops of chilli sauce. Pour into the muffin cups till just below the rim. Bake at 180°C for 10 to 12 minutes or until golden and puffy.
