For an easy dessert, melt 250g white marshmallows with 2 tablespoons of lemon juice then put the mixture into a blender with 4 partially thawed frozen mango cheeks. Blitz to a puree then spoon into 4 parfait glasses and chill for at least 2 hours. Serve decorated with whipped cream and toasted flaked almonds.
