Roasting strawberries brings out the flavour for use in desserts, salads, making icecream etc. Toss together in a bowl: 2 punnets strawberries (hulled and halved), 2 tablespoons caster sugar, 1 tablespoon balsamic vinegar and 1 tablespoon lemon juice. Spread out in a single layer on a paper-lined baking tray. Roast in a 200°C oven for 10 minutes or until just releasing their juices.
