Raspberry and chilli coulis: Combine in a blender 300g frozen raspberries (thawed), sweet chilli sauce and coriander to taste. Blitz to a puree. Serve alongside individual portions of pâté and fingers of hot buttered toast for an easy entrée. Any leftover coulis can be used with cold chicken or ham.
