Friday Food TipFoodLogoPickled zucchini: Bring to the boil 2 cups water, 2 cups sugar and ½ cup white wine vinegar. Slice four zucchini into 1cm thick pieces and pour enough of the liquid over the zucchini to cover. Set aside to cool. Serve with fish or use in salads or on sandwiches.
