Mint sauce: In a small saucepan, put ½ cup apple cider vinegar, ¼ cup water and 2 tablespoons of caster sugar and stir until sugar is dissolved. Boil for 5 minutes. Cool for 20 minutes then stir in ¾ cup chopped fresh mint leaves.
