Satay Sauce: Heat 1 chopped large brown onion and 2 teaspoons of crushed ginger in 2 tablespoons of oil, stirring until onion softens. Add 1 cup coconut cream, ¾ cup crunchy peanut butter, 2 tablespoons sweet chilli sauce, 2 tablespoons light soy sauce and ¼ cup crushed roasted peanuts. Simmer and stir for another minute or so. Serve with grilled chicken, steamed rice, ribbons of cucumber and lime wedges.
