Spaghetti with zucchini: Cook 400g spaghetti and while you are doing so, fry four medium-sized zucchini (sliced in discs) in olive oil until lightly browned. In another pan, sauté three crushed garlic cloves, then add the cooked spaghetti with a ladleful of the pasta water. Add the zucchini and mix well. Add fresh basil and a handful of grated provolone cheese then mix until fully melted.
