Crumbed dishes: When making crumbed fish, cutlets, croquettes and other crumbed dishes, add ¼ teaspoon of baking powder into the beaten egg before dipping the food in. The egg will become thick and foamy, holding more crumbs, and the food will be a lovely golden brown when cooked.
