Friday Food TipFoodLogo Mix together Parmesan cheese, flour and a pinch of pepper, then spoon onto a baking sheet and grill for a couple of minutes until golden. When they have cooled, mix some crème fraiche with lemon zest, season to taste and spoon on top of the crisps. Grate a little Parmesan on top, and add a few flakes of hot smoked salmon and a sprinkle of black pepper.
