Pumpkin smash: Peel and chop pumpkin, toss chunks with olive oil and salt, then roast until just soft. Smash roughly in the roasting pan with the back of a spoon. Roughly chop almonds and mix with breadcrumbs and shaved parmesan. Sprinkle pumpkin with the almond mixture and put back in the oven or under the grill to crisp up. Eat with grilled meats and/or a green salad. Try with parsnips and hazelnuts.
