Friday Food TipFoodLogoBeetroot salad: Grate a cucumber and mix with a small tub of Greek yoghurt, a couple of cloves of garlic (chopped), and chilli and lemon juice to taste. Drain an 850g can of beetroots, put in a bowl and dollop the cucumber mixture on top. Garnish with a generous handful of mint leaves.
