Red Cabbage and Mushroom Parcels: Put 200g chopped mushrooms, ½ finely chopped onion and 2 crushed garlic cloves in a pan with a little bit of oil and cook over a medium heat. Stir in 250g microwave brown rice and quinoa, ¼ cup chopped parsley, finely grated rind of a lemon and 2 tablespoons of chopped roasted hazelnuts, then cook for a few more minutes. Blanch 4 large red cabbage leaves in salted boiling water for a few minutes, then pat dry and divide mixture onto each leaf. Fold into parcels (secure with string if you need to) then steam for 5 minutes or until tender. Top with yoghurt and parsley.
