FoodLogoFor a hearty winter salad, toss together brown rice, barley or freekeh, toasted cashews, chopped spring onions, steamed broccoli, baby spinach, dill and crumbled feta. Make a dressing of olive oil, lemon juice, salt and pepper, and toss through. This is a nice salad on its own or you can serve with grilled tempeh or chicken.
