If you’re one of those people who always look at the dessert menu first, you will love this Raspberry Lamington Rosé. It’s from a range called Patisserie which is inspired by desserts and sweet treats that would be right at home in an elegant French patisserie.
Others in the range include Creme Brûlée Chardonnay, Passionfruit Friand Sauvignon Blanc, Strawberry Macaron Rose, and Blackberry Tart Shiraz. The sparkling Rosé created in collaboration with Cakeboi pâtissier, Reece Hignell, is the latest addition and surely its most inspired label yet.
Raspberry Lamington is one of the signature cakes of Hignell, a pâtissier extraordinaire who shot to fame on TV’s MasterChef, recreating recipes he remembered baking with his beloved Nan. The founder of popular Newcastle patisserie, Cakeboi, he’s an engaging fellow who I had the pleasure of meeting during Newcastle Food Month earlier this year.
Hignell and the winemaking team from Fourth Wave Wine, producer of the Patisserie range, designed the sparkling Rosé to capture the essence of Cakeboi’s Raspberry Lamington. Bright raspberry jelly flavours are layered with hints of coconut and vanilla, while a delicate frizzante finish adds a gentle sparkle and texture reminiscent of a freshly baked sponge.
Fourth Wave Wine’s managing director, Ross Marshall, said developing the Patisserie range had been “a fun flavour journey for all involved … working with Reece was a wonderful chance to take the decadent drinks experience even further.”
Nostalgic and fun
Hignell describes the Rosé as “fun, nostalgic and unlike anything I’ve tasted before”. “The Raspberry Lamington has been one of my favourite signature cakes ever since I used to make it with my Nan, so the opportunity to bring it to life in a completely different way was incredibly exciting,” he said.
Right on trend not just in its beautiful packaging but also in its lower alcohol content — it has an ABV of 8% — this playful conversation starter is bright and fresh with a soft, rounded palate and subtle sweet notes. Just like a freshly baked raspberry lamington.
Patisserie Raspberry Lamington Rosé is available from Dan Murphy stores nationally for a recommended price of $26.99.
