Wicks Estate 2015 Pamela, $30
Wicks Estate produces premium cool-climate wines from its beautiful vineyard at Woodside in the Adelaide Hills. Co-founders Simon and Tim Wicks have dedicated this very fine bubbly to their mother, Pam, “for all the years she dedicated to us”. It’s a classy-looking wine with elegant gold packaging befitting a special wine: Pamela is made only in the best vintages.
Made from Chardonnay and Pinot Noir (both varieties do particularly well in the Adelaide Hills), it is left for four years on tirage, giving it a rich complexity and some subtly toasty notes that will develop with cellaring. For those wanting to pop the cork now, it has a lovely zesty acidity with green apple and white stonefruit notes.
