Friday Food Tip: how to get the best out of chia seeds

For a vegan version of crumbed cauliflower, dip cauliflower florets in aquafaba (the liquid from chickpeas) then in breadcrumbs or spice mix before air-frying or deep-frying. If you are okay with using flour, dip the florets in aquafaba then in plain flour, dip in aquafaba again, then finally dip in breadcrumbs.
