Caramelised onion and cherry tomato tarts: Lie rounds of puff pastry on a lightly oiled baking tray or on individual-sized pie dishes, prick a few times with a fork and top with a sprinkling of feta. Then spoon in some caramelised onion and arrange cherry tomatoes on top. Sprinkle more feta on top, as well as salt, pepper and some sprigs of thyme. Bake 20 to 25 minutes until pastry is puffed and golden. Drizzle with extra virgin olive oil to serve.
